- Tapioca: What Is Its History?
Tapioca, also affectionately known as "beiju," is more than just a simple Brazilian food; it is a true journey through time, filled with history and flavor. In this article, we will explore the fascinating origins and rich traditions that make tapioca an icon of Brazilian cuisine, and discover how Da Terrinha® honors this tradition with its preservative-free, 100% natural, and gluten-free tapioca. Origin and Meaning The journey of tapioca begins long before the arrival of European colonizers. Indigenous peoples of South America have been using cassava, from which the starch to make tapioca is extracted, for centuries. The word "tapioca" comes from the Tupi-Guarani language and means "coagulated" or "coagulated starch," reflecting the natural process of its formation. Traditional Preparation Preparing tapioca is a ritual of simplicity and flavor. Using only two ingredients – tapioca starch and the filling of your choice – you can create a delicious and versatile treat. The starch is spread in a hot skillet, forming a thin and elastic dough. Then, just add the filling, which can range from sweet (such as grated coconut, condensed milk, or banana) to savory (such as cheese, ham, or dried meat). Regional Variations Every corner of Brazil puts its own mark on tapioca. In the Northeast, it is common to find tapiocas filled with sun-dried meat and bottled butter, while in the North, it may come accompanied by tucumã and dried shrimp. In the Southeast, the combination of cheese and coconut is one of the most popular. Tapioca Around the World The fame of tapioca has transcended borders. In Asia, it is known as "sago" and appears in desserts and beverages. In Africa, it is a key ingredient in traditional dishes such as South African "bobotie." This versatility makes tapioca a global star. Curiosities and Benefits Tapioca is not only tasty; it is also an excellent source of energy, rich in carbohydrates. Additionally, it is gluten-free, making it a great option for people with intolerance. Versatile, it can be consumed at breakfast, as a snack, or as a main dish. - Tapioca: how to make and its origins
Do you know the history of tapioca? Understanding its origin and how it became a widely consumed food nowadays. In diets, mainly for not containing gluten and with a variety of fillings, it's a delight. Tapioca is currently known throughout Brazil, in various states, and even abroad. In some regions, it is known as "Polvilho Doce" (in the Midwest, Southeast, and South) and in others as "Goma" (Northeast and North). It is recognized as a Brazilian intangible cultural heritage by UNESCO. Its origin is ancient and from the Amerindian people. There is no authentic or true tapioca, as many say, each region has its own authentic or true tapioca, what exists is the universal tapioca, that simple one without filling, without salt or sugar, and without pure coconut. The production process happens as follows: the cassava is peeled, then ground until it reaches the consistency of a very fine dough. Water is added and then strained. It will remain at rest until it settles. Once separated into two parts (water and cassava gum), the drying process begins, which can be done naturally (exposed to the sun) or artificially (using specific machines). What is a curious fact is the simplicity in the preparation of tapioca, which consists of placing this flour in a frying pan covering the entire bottom. With the heat, everything comes together forming the base of the tapioca known today. Types of tapiocas Tapiocas can be traditional, those with simple fillings, or special tapiocas, also known as gourmet tapiocas, which have more complex fillings, better suited to the taste of contemporary enthusiasts. They can be sweet or savory, they accept all kinds of fillings and creativity, anything that can be used to fill a simple bread, pizza, or crepe will certainly serve to fill a tapioca equally. In its pure form, it does not contain gluten or lactose and is low in calories, care should be taken with the choice of fillings that can spoil all of this. Currently, many weight loss diets recommend tapioca consumption precisely because of its low calorie content.
- After all, does pepper harm?
Many times, people mistakenly say that pepper is bad for the stomach, but several studies have shown the opposite. In one study, with the help of an endoscope, American doctors examined twelve volunteers after they had ingested pepper with their meal, and found nothing wrong. Still in the same study, pure pepper extract was sprayed directly on the volunteers' stomach walls, and once again, there was no sign of irritation. Contrary to what they say, pepper is good for our health! And it is precisely the substance that gives pepper its spicy character that has most of the beneficial properties for our health. What are the benefits of pepper? The active ingredient in pepper is capsaicin. This substance has various functions that favor our body, such as: It is a natural analgesic: capsaicin promotes the release of endorphins, a neurotransmitter that has the ability to reduce or even inhibit electrical signals of pain. In addition, endorphins generate feelings of well-being and euphoria, being favorable in periods of higher stress and tension. Prevents premature aging and degenerative diseases: pepper contains good amounts of vitamin A, vitamin C, and vitamin E. These vitamins combat free radicals, preventing premature cellular aging, that is, the vitamins "protect" healthy cells. Therefore, they prevent diseases such as Alzheimer's, Parkinson's, and even cancer. Aids in promoting weight loss: Pepper is a natural thermogenic, so by speeding up metabolism, it promotes fat burning and consequently, weight loss. Prevents blood clot formation: Pepper is one of those foods that "thin the blood," being very favorable to those people who have a greater tendency to produce blood clots. Contraindications Like other foods, when consumed in excess, pepper can cause problems. Excess consumption can cause irritation to the stomach lining and other stomach problems. Mouth sores and heartburn can also occur. For people with gastritis and/or ulcers, consumption should be greatly reduced or even suspended, according to the recommendation of a doctor or nutritionist.
- Tapioca, an Indispensable Part of Your Daily Diet
It has already won over many people! We're talking about tapioca, a popular food here in Brazil that is increasingly becoming part of the Brazilian diet. But does tapioca make you gain weight? And what are its benefits? Nutritionist Carolina Arbache answered these and other questions! Check it out: To include tapioca in a balanced and healthy diet, the tip is to choose the fillings wisely. Additionally, since tapioca is rich in carbohydrates and low in fiber, its glycemic index is high, which means tapioca's carbohydrates are absorbed quickly, leading to a spike in blood sugar levels. To avoid this, one tip is to include chia or ground flaxseed (either in the dough or in the filling) and add a drizzle of coconut oil to prepare it. And there's more... What is tapioca made of? Tapioca is made from hydrated cassava (or yuca or manioc) starch. Some people add a pinch of salt to the dough, and that's it! No oil or fat is added to the dough or during preparation, nor any other ingredient. Additionally, some tapioca brands may be flavored and, in those cases, they usually contain a bit of salt. What are the benefits of tapioca? Since it's made only from cassava, tapioca is a natural food with low sodium content, no fat, rich in easily digestible carbohydrates, and gluten-free. Remember that gluten is a protein that can cause inflammation in the body, leading to fat accumulation, intestinal issues, and bloating. Besides all that, it's worth mentioning another great benefit of tapioca: its delicious taste and the possibility of preparing it with different fillings! Thus, tapioca can be included in the diet at different times of the day. Does tapioca make you gain weight? It depends on several factors, such as: the quantity you eat, what you use as filling, and when you eat it (a tapioca filled with chocolate for dessert, for example, will definitely lead to weight gain). Jokes aside, tapioca is indeed a great carbohydrate option and can be part of a healthy diet. Although it's a simple carbohydrate (which turns into fat quickly), it has a lower glycemic index than white bread and contains no fat or gluten. For those looking to control their weight and not using it as a pre-workout meal, one tip is to include ingredients rich in fiber, such as chia or ground flaxseed, in the tapioca (either in the filling or in the dough). This way, it's possible to reduce the glycemic index of the preparation, which prevents weight gain and also increases its nutritional value. How many calories does tapioca (without filling) have? A tapioca made with 2 tablespoons of starch has about 70 calories. What is the best time to consume tapioca? Since it's versatile, tapioca can be included in any meal of the day, such as breakfast instead of bread or even as a snack between main meals. On busier days, tapioca can be a quick dinner snack, always accompanied by healthy fillings and, if possible, with a salad and fruit for dessert, making it a complete meal. For those who exercise, here's the best time to consume tapioca: Pre-workout: Tapioca is a great pre-workout option, as it's a source of simple carbohydrates (quickly absorbed) and easily digestible, providing plenty of energy before exercising, but it doesn't effectively aid in muscle gain. Post-workout: Crepioca is a good post-workout option. In the crepioca recipe, two tablespoons of tapioca starch are mixed with an egg (or just the egg white if preferred). It can also be consumed in the traditional way, with a healthy filling. Since tapioca has a high glycemic index, it aids in the absorption of other proteins, such as those found in sports supplements like whey protein. Healthy fillings for tapioca To include tapioca in a balanced and healthy diet, the tip is to choose fillings wisely. Additionally, since tapioca is rich in carbohydrates and low in fiber, its glycemic index is high, leading to a spike in blood sugar levels. To avoid this, one tip is to include chia or ground flaxseed (either in the dough or in the filling) and add a drizzle of coconut oil to prepare it. Here are some combinations of healthy fillings: Shredded chicken, ricotta cheese, and parsley; Spinach and cherry tomatoes; Tuna and grated carrot; Corn, eggplant, and tomato; Banana and peanut butter; Scrambled eggs; Carob cream with strawberries. Terrinha Tapioca is a typical Brazilian delicacy made purely from cassava. It's a 100% natural gluten-free flour with no sodium, no sugar, no fat, and no preservatives, so it doesn't harm your body. Ready to eat: Terrinha Tapioca has become very popular in recent years and has been delighting palates from around the world because, besides being gluten-free, a bread/wrap/tortilla substitute, it's versatile and can be accompanied by sweet or savory fillings, suitable for vegans and vegetarians. Ready to make crepe-like pancakes with different toppings for breakfast, dinner, or dessert. Da Terrinha Tapioca, the new global trend. - Recycle Your Waste and Win Prizes
With the aim of engaging people in a sustainable mindset, creating a cycle of environmental loyalty that generates benefits for all, Molécoola was born. Molécoola grew up hearing that the place for trash is in the trash, end of story. Until recently, no one cared to know where the waste goes and whether it will have a proper destination. In fact, many of us still don't even bother to separate what we throw away. In the rush of life, it's indeed difficult to pay attention to what we've been taught has no value. But that needs to change. The waste we produce is at the heart of one of the biggest environmental challenges of the world today. Governments create new laws, industries make a huge effort to comply, more conscious consumers try to change habits, and so on. Molécoola was born to help ordinary people, like you, to collaborate with this incredibly complicated challenge. There are plenty of people trying to solve this issue - and each one faces a different challenge. Molécoola understands that those who seek to collaborate with the planet need to be rewarded. There's no moral lesson here, alright!? No one thinks you're a terrible citizen because you don't separate everything at home. On the other hand, we believe that an incentive for those who make an effort is a game-changer. It's like in a video game: if you don't pass a level, what's the fun? With that in mind, Molécoola developed a project to create a simple way to turn this necessity into a business that stands on its own feet, with a long-term vision and the ability to grow immensely. The result is a combination of an app and collection points distributed in high-traffic areas. In practice, it's like this: you search for the nearest Molécoola store on your phone and take your recyclable waste there. The best part is that your effort is rewarded with points that can be exchanged for gifts whenever you want. In the end, everyone wins. No final, todo mundo ganha. - Gluten Allergy: Symptoms and How to Avoid
Many confuse gluten allergy with celiac disease. Although similar, both conditions need to be treated differently. After all, a more acute allergic reaction can be fatal. Found in wheat, barley, and rye grains, gluten is nothing more than the combination of two proteins, gliadin, and glutenin. The nutrient's function is to make the dough more elastic and resistant. If you experience symptoms such as swollen or tight throat, chest pains, severe difficulty breathing and swallowing, rapid heartbeat, and dizziness, you need to seek medical attention immediately. These cases are rarer, but a more severe allergic reaction can lead to glottis closure and anaphylaxis. To confirm the allergy diagnosis, you can undergo a skin test. The doctor may also request a blood test to confirm the condition. Treatment and Care Those who suffer from gluten allergy have a treatment very similar to those with celiac disease. Allergic individuals need to exclude from their diet all products that contain the protein. In some cases, doctors may allow the consumption of rye and barley. Therefore, a consultation with a specialist is essential. Some doctors even desensitize the patient. That is, the allergic person is exposed to small amounts of gluten-containing foods, and then the portion consumed is gradually increased. The idea is for the body to get used to the contact with the product and the allergic reaction to subside. This approach does not work for celiac patients. Remember when we mentioned that product labels indicate whether the product contains gluten or not? Both celiacs and allergic individuals need to be very attentive to the packaging of what they consume to avoid unnecessary risks. Few people know, but condiments, ice cream, and even modeling clay may contain the protein. Differences between celiac disease, gluten intolerance, and gluten allergy Similar to each other, people may have a bit of difficulty differentiating between each of these conditions. Here are some tips: 1. CELIAC DISEASE Celiacs suffer from an autoimmune response of the body when gluten comes into contact with the intestine. In this condition, the symptoms are related to digestion problems, where the patient may develop diarrhea, lesions on the intestinal wall, malabsorption, and malnutrition. 2. GLUTEN INTOLERANCE Known as non-celiac gluten sensitivity, this condition is detected when the patient has some symptoms after consuming the nutrient, but celiac disease and gluten allergy have been ruled out. This can only be determined through clinical exams and medical analysis. Specialists believe that gluten intolerance occurs due to frequent exposure to wheat and cereals. 3. GLUTEN ALLERGY Food allergy is an exaggerated reaction of our organism to a certain food. Immediate or short-term, this condition usually comes with symptoms in the respiratory tract (such as rhinitis) or on the skin (such as hives). Care must be taken because the condition can cause anaphylaxis - a severe disorder in blood circulation and oxygenation - and be fatal. Gluten allergy occurs as follows: the proteins present in the nutrient can be perceived by the body of some people as a threat. Gliadin (present in gluten) can be the "trigger" that in our body reacts with immunoglobulin E (IgE), causing an allergic reaction with some symptoms, such as rhinitis, asthma, hives, and in some more severe cases, anaphylaxis. It is important to note that this condition can be triggered not only by the ingestion of foods and beverages containing gluten, but also by the inhalation of this product suspended in the air. Allergy is much more common in babies and young children, whose immune and digestive systems are still developing. As they grow, the tendency is for the disease to disappear. However, this does not exclude the possibility of it also occurring in adolescents and adults. Symptoms of gluten allergy But how do you know if you have a gluten allergy? Keep an eye on the list of symptoms below. If you experience any of them, remember to seek medical help. And if the allergic reaction is very aggressive, go to an emergency room immediately. Stomach cramps or diarrhea (similar to what celiacs experience); Itching on the skin shortly after consuming the food; Swelling in the throat; Headache; Rhinitis; Asthma; Difficulty breathing; Hives. We mentioned earlier, but it is very important to emphasize. To confirm the diagnosis of the allergy, you can undergo a skin test.
