Da Terrinha Granulated Tapioca: how to hydrate it and make desserts
Choose our granulated tapioca, measure the liquids and make desserts for your table.
In this article
With Da Terrinha Granulated Tapioca, you can make cakes, puddings and desserts that highlight the texture of the grains after hydration. Choose a recipe that calls for granulated tapioca, measure the liquids and allow the resting time needed for the desired texture.
Our Da Terrinha Granulated Tapioca is made for these preparations. For filled tapioca cooked in a skillet, use traditional Da Terrinha tapioca instead: each format has its place in the kitchen.
Which Da Terrinha tapioca should you use?
Use Da Terrinha Granulated Tapioca when a recipe calls for tapioca grains to hydrate. To make a tapioca disc in a skillet, choose traditional Da Terrinha tapioca, which is ready for that preparation.
| What you want to make | Ingredient to choose |
|---|---|
| Cake or dessert that calls for tapioca grains | Da Terrinha Granulated Tapioca |
| Folded filled tapioca | Traditional Da Terrinha tapioca |
| Cheese bread or biscuits with starch | The starch specified by the recipe |
Traditional Da Terrinha tapioca has just two ingredients: cassava starch and water, with no preservatives. It is already loose and ready to use, so it does not need sifting. Spread it in the skillet and follow the directions on our package.
That convenience belongs to the traditional format. With Da Terrinha Granulated Tapioca, the grains absorb the liquids in the recipe and rest for the required time.
How do you hydrate it?
Use the liquid, temperature and proportion required by the recipe. Hot milk, coconut milk and water do not produce the same result in every preparation.
Choose a bowl with enough room for mixing. Hydration needs to reach the grains at the bottom and sides, without leaving a dry layer beneath the surface.
- Measure the Da Terrinha Granulated Tapioca and liquids before you begin.
- Check whether the liquid should be added hot, warm or cold.
- Add ingredients in the order stated by the recipe and mix the bottom of the bowl as well.
- Allow the specified resting time, mixing again if the recipe calls for it.
- Check the texture before assembling, baking or chilling the dessert.
In a chilled tapioca cake recipe published by Nestlé Recipes, warmed milk takes part in hydration and the refrigerator helps the dessert set. These steps have distinct purposes. See the chilled tapioca cake reference.
Da Terrinha tip: mix a small portion from the bottom before assessing the texture. The surface may seem hydrated while there are still dry grains in the bowl.
A spoon dessert to try
For a small preparation, use 100 g of Da Terrinha Granulated Tapioca, 300 ml of milk, 100 ml of coconut milk and 40 g of condensed milk. This makes a creamy dessert for cups; to unmold a cake, choose a recipe with the right structure.
Heat the milk until hot, taking care not to let it overflow. Mix the granulated tapioca with coconut milk and condensed milk; add the hot milk and stir well. Use around 20 minutes as an initial resting-time reference and stir again during that period.
Check whether the grains have softened. If the mixture thickens before that, add a measured amount of hot milk, stir and check again. To serve chilled, divide it into suitable containers and keep it refrigerated.
Does it need an oven?
It depends on the recipe. You can find granulated tapioca cakes made through hydration and refrigeration, as well as baked versions. Read the full method before gathering ingredients.
In chilled cake, the mixture needs to hydrate and become firm during refrigeration. In baked cake, use the ingredients and baking process required for that batter. Putting a dessert intended for refrigeration in the oven does not automatically fix a runny mixture.
The name “cuscuz” also calls for attention: Da Terrinha cuscuz with corn flakes is made from corn and steamed. Some sweet versions use granulated tapioca and follow a different recipe.
How do you use condensed milk?
Start by hydrating Da Terrinha Granulated Tapioca and add condensed milk in the amount called for by the recipe. It adds sweetness and is part of the preparation, but does not replace the hydration liquids.
Decide on the result before you begin: a spoon dessert or an unmolded dessert. The first can be more fluid; the second needs proportions and setting time suited to the assembly. Coconut and toppings can complete the flavor, in amounts that control both texture and sweetness.
How do you adjust the texture?
| What happened | What to check |
|---|---|
| Grains are still hard | Amount and temperature of liquid, mixing and resting time |
| Dry spots in the bowl | Hydration at the bottom and sides |
| Dessert does not set for unmolding | Proportions, method and chilling time |
| Dessert is too sweet | Condensed milk, sugar and toppings combined |
Adjust the step that caused the issue. More condensed milk is not the answer to hard grains. Adding liquid to a dessert that has already been assembled can also compromise its structure.
How do you read the nutrition table?
Check the nutrition table on the Da Terrinha Granulated Tapioca package and consider every ingredient added to the dessert. The nutrition table for traditional Da Terrinha tapioca describes a different format.
Note how much granulated tapioca, milk, coconut, condensed milk and topping went into the preparation. The dessert's composition includes all of these foods. When comparing packages, use the same quantity basis, such as 100 g.

Can I replace milk with water?
The substitution changes flavor, creaminess and structure. Choose a recipe designed for the liquid you want to use.
Are granulated tapioca and sago the same thing?
Check the format called for by the recipe. Granulated tapioca and pearls sold as sago can require different proportions and methods.
